Cinnamon Pumpkin Cake



From my dear friend Fay:

Cinnamon Pumpkin Cake

1 yellow cake mix (boxed is fine)

1 can (15-16 oz.) pumpkin

1/2 cup of water

1/2 to 1 bag cinnamon chips (found mostly during the fall)

Mix all ingredients and bake in 350* oven for 30-35 minutes. I have to bake mine a little longer or it's too moist in the center. It's the quickest, most yummy rainy day dessert in the world!

Yummy. It is still raining here...why don't you bake a loaf and either bring it to my house and I'll put the tea on or call me when it is done and I'll come to your house for a cup! :-)

OR you could bake some and just bottle the smell, which I am sure is divine, and send some my way!

Try using real Cinnamon in your recipe and reduce on the sugar.

The Cinnamon in the US is actually Cassia which has a high level of coumarin.
